POTATO SOUP RECIPE

I made sausage and potato soup a few weeks ago and it turned out really well...possibly the best potato soup i've had...so i thought i'd share it on here. If you make it, let me know what you think. Feel free to share recipes of other foods on here too (real food, not roadkill recipes i'm looking at you, darrell, doug and mark). I'm making stuffed pepper soup this weekend, so there might be another recipe coming soon!

ROBIN'S EASILY HOMEMADE SAUSAGE AND POTATO SOUP

1 pkg (1 lb) smoked sausage, sliced
1 pkg Potatoes O'Brien
2 cans chicken broth
3 cups of milk
1 pkg of Idahoan Loaded Baked Potato instant mashed potatoes
Parmesan cheese


In large pot or dutch oven, add potatoes o'brien, chicken broth and sausage slices. Cook on low for 30 to 40 minutes until potatoes are tender.
Add 3 cups of milk and simmer until milk is thoroughly heated. Slowly add instant potatoes, stirring constantly until dissolved (for thicker soups, add most of pkg; for more soup-y thickness, only add about 1/2 of pkg). Cook on low for several more minutes, stirring frequently.
Serve with parmesan cheese sprinkled on top.

This is my recipe I made up so these are the ingredients i used...you can tweak it and make it more to your liking - maybe use diced ham instead of sausage, use garlic flavor instant potatoes instead of loaded baked potato, top with cheddar cheese instead of parmesan. You might want to try it this way first though, it came out really good and the instant potatoes gave it a lot of flavor and texture. This probably made about 6 to 8 servings. Also, i used the whole pkg of instant potatoes and it made it very thick and hearty, almost like a stew.

potatoes o'brien come packaged (ore ida and kroger brands, might be other brands)already diced with onions, green and red peppers. i usually have some on hand cause they're handy for dishes or for weekend breakfast with some eggs scrambled in them.

you can certainly peel and dice your own taters...probably need about 4?

sounds really good. I will have to make that but I will use real potatoes. Maybe Mom should post her lasgna recipe hahahahahaha.

potatoes obrien ARE real potatoes. somebody else just did the peeling, dicing and adding (and dicing) the peppers and onions for you.

your mom's lasagna recipe is also my mom's recipe. it is easy and delish!

I know the history but mom wont give me the recipe. Since I am the only one of her kids who can cook I better be the one to get it lol
